Fall Cider – A Perfect Compliment for Thanksgiving

Consider a Fall Apple Cider, it could be the perfect compliment for the Thanksgiving turkey, suggests Buzz contributor and sommelier Cassidy Rose Gyetvan (photo from Towfiqu Barbhuiya via Unsplash)

The turkey is roasting, potatoes are in the oven, and the scent of pie is wafting through the air… and what could be better to pair with this meal than a fall cider? Cider always reminds me of fall (even though I do drink it year round). Hard cider is very similar to wine, but made with apples instead of grapes.

The first step in making cider is harvesting the apples, which is usually done in late summer and early fall. The apples are cleaned and then go through a process called “milling,” which is when a machine turns the apples into a pulp. The pulp is then put in the cider press, which creates a juice from the pulp. The juice is then placed in barrels with wild yeast for the fermentation process. This can take anywhere from two days to two weeks. During this process, the yeast will turn the sucrose, fructose and glucose of the apples into alcohol. The cider is then left for however long the maker sees fit to achieve a certain flavor. The final step is blending the cider with sugar or other fruit juices to achieve a desired taste. Then the cider is packaged and ready to be enjoyed.

Cider is a great drink because it has a low alcohol content and is also gluten-free for those who are gluten-intolerant. One of my favorite cider companies is 101 Cider House here in Los Angeles, which makes sustainable and probiotic ciders. I also love Isastegi Cider, which is a company that has been making cider in the Basque Country of Spain since the 17th century. You can get both of these ciders at Silverlake Wine in Silverlake. So now go grab a cider just in time for the holiday!
